7 days down and 7 more to go!! I am feeling good so far and happy that I am going into vacation on a clean note. I didn’t include snacks this time because it would be more of the same. I think you get the idea, if not just copy lasts weeks.
Chicken Stir Fry and Cauliflower Rice
Crockpot Chicken Tacos
Beef Stew (We are having our Valentines Dinner this night; I will eat as clean as possible at whatever restaurant we end up at.)
Scrambles Eggs, Bacon, Fruit
Steak, Baked Sweet Potatoes, Roasted Brussel Sprouts
Scrambled Eggs, Fruit
Picnic Night: Sushi Rolls and Fruit Salad
Sweet Potato Hash
Repeat of your favorite meal from the last 13 days or create your own paleo meal.
We are leaving for the US this day so we will have leftovers to clean out the fridge.
Assorted Snacking Fruit
1 head Broccoli
1 head Cauliflower
5 Sweet Potatoes
1 Bunch Green Onions
3 pounds Chicken (Or 2 pounds and 1 Rotisserie)
1.5 pounds Stew Meat (or a roast cut up)
1 Pound Minced Pork
1 pound Crab Meat
Steaks (one per person)
Paleo Mayo (or make your own lots of recipes are available online like here, here, and here)
5 spice powder
1 can full fat Coconut milk
Chop 1 Zucchini, onions, 1 pepper and 2 handfuls of spinach.
Sauté in Olive Oil, just to soften do not cook all the way through
Add vegetables to a 9X13 baking dish
Beat 10 eggs together with 1 cup coconut milk salt and pepper
Pour egg mixture over eggs
Bake for 25 minutes in a 350 oven
Store covered in the fridge
Cut chicken into slices
Chop Broccoli, Onions, Carrots, Green Pepper and Egg Plant
Heat a Large Pan or wok.
Add Olive Oil
Season with 5 spice powder and coconut aminos
Cover and cook until veggies are tender
Serve Over Cauliflower Rice
Crockpot Chicken Tacos:
In the Crockpot Combine 1 pound Chicken Breast or the meat of one rotisserie chicken with 1-2 Jalapeños, onions and 1 can of diced tomatoes, 1/2 cup chicken broth
Cook on low 6-8 hours
Serve in Butterhead lettuce wraps and top with Pico De Gallo and Guacamole
Roughly chop the carrots, onions and 2 sweet potatoes
Combine Stew Meat, chopped vegetables, 1 cup beef broth, 2 bay leaves, 6oz tomato paste, salt and Pepper in a crockpot
Cook on low for 8 hours.
