This has become one of our go to breakfast choices. It can be made ahead of time to save time in morning. I like to make a huge batch on Sunday nights to eat through out the week, once its prepared just keep sealed in the fridge. In the morning you can microwave whatever size portion you want or reheat in a pan with some add ins. It is also very filling. This recipe provide is enough for 2 servings.
2 Sweet Potatoes about 2.5 cups–peeled and diced
1/2 small yellow onion– diced
1/4 c no sugar added dried cranberries
3 strips of bacon
2 handfuls of Kale
1 tsp Ground Ginger
1 tsp Cinnamon
1 tsp Cayenne Pepper or Chili Powder
Salt and Pepper
Heat 1 tbsp coconut oil in a pan. Add onion, bacon, and cook until softened add sweet potatoes and let cook for 5-10 mins. Season, add Cranberries and water. Cover, allow to cook until all water is absorbed, if potatoes are not done add some more water.
Once the potatoes are tender add in the chopped Kale and cover for 2 more minutes.
Once the potatoes and kale are tender plate and enjoy!
A million things can be added. Try adding breakfast sausage, or my favorite turkey breast. Add extra fruits or veggies like spinach, peppers, pumpkin, apples, or raisins. We also top ours with 2 over easy eggs. I am usually not a fan of running eggs but for some reason over this hash the runnier the better.
Really it is anything goes, just be sure to read labels. It is tough to find sausage or bacon without sugar added but it can be done. Dried Cranberries often have sugar added.
