Hi all just a quick recipe post here. Last night for dinner we had Chicken Veggie Meatballs, they are a family favorite. Mya always asks for seconds of these, which seriously never ever ever happens with her. She ate 15 for lunch today. They can be made ahead and frozen. Its a sneaky way to get your kids to eat more vegetables. I have no pictures and its a really rough recipe but please try them out, they are seriously so good.
What you Need:
2 pounds ground chicken
3 handfuls of spinach
2 cloves garlic
10 button mushrooms
1 handful cilantro/coriander leaves
salt and pepper
What you do:
In a food processor combine all the vegetables and spices. Pulse until minced really small
In the processor bowl (after removing the blade) mix in the meat and eggs. Hands work best for mixing here.
Once throughly combined make meatballs either by hand, with a small scooper or measuring spoon
Bake at 350F for 25 minutes.
The bigger the balls the longer the cooking time, using the scooper insures they are all the same size so they bake evenly. This recipe made about 2 doz balls.
