Life got to me last week and I didn’t execute all of the meals I had planned. For starters my youngest daughter got a very bad cut on two of her fingers. She was diagnosed with a partial finger tip amputation and had to undergo surgery and spend a night in the hospital. She is much better know but still has a lot of healing to do. I spent the night with her and did not cook. I have no idea what my husband and oldest ate that night. On Friday our wonderful helper made us an authentic Phillipino meal. Saturday was a super busy day as well and I ran out of time to make dinner so we ended up walking to a Korean place near our house. Bipbambop Anyone? So for meals this week I decided to make the things I did not get to last week. We are hosting about 20 people for thanksgiving on Friday afternoon so I only planned meals through Thursday. Its going to be another crazy week in this house!
Sunday: Meatloaf, Baked Potatoes, and Roasted Carrots
Monday: Italian Chicken over Zoodles (detailed recipe to come)
Tuesday: Chicken Meatballs, Asparagus and Side salad
Wednesday: Leftovers (I have running club this night so dinner will be on Hubby)
Thursday: Crockpot Chili
