Super Quick post today, I made this soup yesterday and it was amazing so I had to share. Because I wasn’t planning on making a post about this soup I only have the one picture, but I will make it again so I can update later.
Let my preface this with I did not measure anything so adjust to your tastes.
2-4 Chicken Breast or a Whole Roasted Chicken (maybe a rotisserie one to save a lot of time)
1 Bell Pepper
Grape Tomatoes ( I used 15 I think)
2 Sweet Potatoes
4 Cups Chicken Broth
1 Bunch Cilantro
3-4 Garlic Cloves
Yellow Curry Powder
Salt and Pepper
How to Make it:
Dice and Brown the Chicken Breast in Olive Oil or Coconut Oil
Then added diced onion, bell pepper, and garlic – let sauté until soft.
Seasoned with Garlic powder, Chili powder, Cumin, Oregano, Yellow Curry Powder (be careful with this one its potent, maybe a teaspoon) salt and pepper–Stir really well to coat the chicken
Add 2 Sweet Potatoes roughly chopped, and Grape Tomatoes cut in half
Add 1 box Chicken Broth (Pacific Organic is my favorite)
Bring to boil and then set to simmer until potatoes are soft.
Before serving throw a big handful of chopped cilantro in.
If I had them I would have added diced Avocado to serve as well but our only one was brown when I cut it
Thats really it! It took about 30 mins from start to finish.
Its SOOOOOO Good I had to stop myself from having a third bowl.
